I tried this recipe and I liked it!
- 2 eggplants
- 2 tomatoes
- Smoked cheese
Preparation time: less than 90 minutes
RECIPE PREPARATION Fan eggplants:
We start with eggplant, wash them and cut them into slices to the tail without peeling them. Sprinkle each slice with a pinch of salt and pepper.
We wash the tomato and cut it into slices. I used cheese and prosciutto already sliced.
We start to assemble the fan l: between the eggplant slices we put cheese, prosciutto and tomatoes. We put thyme on top and a little oil. We cover with a lid or aluminum foil. We put it in the oven at 200 º 30-40 minutes until the eggplant softens. We take the aluminum foil and put some Parmesan on top and leave it in the oven for a few more minutes until it browns.
